Herbed Pepper Havarti Egg in a Hole with Bacon

Ingredients

  • For seasoning the pan: a clove of peeled garlic and a bit of butter

For each serving:

  • 1 slice of bread
  • 1 egg
  • 1 small sweet pepper, sliced (or bit of chopped bell pepper)
  • about 1/2 slice of bacon, chopped
  • a couple slices of Havarti cheese
  • a few small cherry tomatoes, halved if you like
  • a small sprig of fresh thyme & oregano (or other fresh herb)

Instructions

  1. Preheat a frying pan over medium heat. When it’s hot, rub the pan with just a bit of butter and the garlic clove. Save the garlic for another use.
  2. Take the slice of bread and cut a hole in the middle with a cookie cutter. Set aside the “hole” for toasting later.
  3. Set the bread in the pan and crack the egg into the hole. Reduce heat slightly, cover the pan and let the egg cook for a few minutes or until the egg is set on the bottom.
  4. Flip over the bread carefully and let cook for just a minute on the other set till the other side of the egg is set too.
  5. Spray a baking sheet with cooking spray (I used my toaster oven baking sheet). Using a spatula, slide the egg & bread on a baking sheet and place slices of sweet pepper on top, then sprinkle with bits of bacon. Cover with slices of Havarti cheese and add the cherry tomatoes.
  6. Set the baking sheet in the oven and broil just until the cheese is melted.
  7. While the cheese is melting, toast the “hole” that you cut out of the bread in the frying pan, soaking up the remaining garlic and butter.
  8. Slide the cheesy egg in a hole onto a plate and sprinkle with fresh herbs. Set the toasted “hole” on the side and enjoy!
