Kumquat Maple Pecan Oatmeal

Ingredients

  • 1/4 cup quick cooking oats
  • 1/4 cup water
  • 1/4 cup milk (I used 1%, but use whatever kind you like to drink)
  • 1 Tablespoon Brandied Candied Ginger Kumquats (recipe here)
  • 1 Tablespoon real maple syrup
  • A dash of salt
  • 12 Tablespoons pecans, roughly chopped

Instructions

  1. Set the pecans on a baking sheet and put them in a toaster oven (or regular oven) at 400 to toast.
  2. Stir together the oats, water, milk, kumquats, maple syrup and salt in a microwave-safe bowl. Microwave on high for 1 minute.
  3. Take the bowl out and stir. Microwave for 1 more minute. Stir again.
  4. Check the pecans. They should be fragrant and just lightly browned.
  5. Top the oatmeal with the toasted pecans and enjoy πŸ™‚
