- For the cauliflower steaks:
- 1 head cauliflower
- Olive oil
- Red Robin Seasoning (or your favorite seasoned salt) and Trader Joe’s 21 Seasoning salute (or non-salt seasoning)
- For the lobster, per person:
- About 1/4 cup vodka sauce (store-bought or this recipe)
- 2 teaspoons grass fed butter
- About 3 oz. cooked lobster, cut into small chunks
- For garnish: fresh basil and a few shards or shreds of parmesan cheese
Instructions
- Prepare your grill. While it’s heating, remove leaves from the cauliflower, cutting the stem off at the base of the cauliflower. Slice vertically in 3/4-inch slices. Brush both sides of each side with olive oil, then sprinkle with seasonings.
- Grill the cauliflower for several minutes on each side, until browned, perhaps charred in a few spots and crisp tender.
- When the cauliflower is almost done, heat the vodka sauce in a small saucepan (or warm in the microwave). Heat the butter in a small frying pan and toss the lobster in the butter just until heated. (If using raw lobster, cook just until it turns pink.)
- Place a cauliflower steak on a plate, top with lobster, then vodka sauce. Garnish with fresh basil (or other herbs) and cheese if desired. Enjoy!
