Maple Garlic Roasted Tomatoes

Description

Addictively sweet with a little garlic bite, these maple garlic roasted tomatoes add a bright punch to salads, pizza, burgers, rice, pasta, soups, seafood, chicken, pork, veggies and even nachos! You can use them on just about anything, or just eat them as snacks.


Ingredients

  • 30 sweet cherry tomatoes
  • 2 teaspoons olive oil
  • 2 Tablespoons real maple syrup
  • 1 teaspoon granulated garlic
  • 1 teaspoon salt flakes

Instructions

  1. Preheat oven to 400 F. Line a small rimmed baking sheet with parchment paper or a silicon baking mat.
  2. Cut the cherry tomatoes in half length-wise and set them in a small mixing bowl. Add the rest of the ingredients and stir to coat the tomatoes evenly.
  3. Pour the tomatoes and the lovely garlicky syrup mixture out onto the prepared pan and spread them out to give each of them some room.
  4. Set in the oven to roast for 25 minutes. Take them out and flip them over or just give them a gentle stir. If any of them look wanting for syrup, use a spoon to scoop it up over the dry babies.
  5. Put them back in the oven to roast for another 20 minutes or until they are caramelized and some of them are browned on top. 

Notes

Serve immediately, or gently spoon them into a covered container to store in the fridge for up to a week. Make sure to save the syrupy goodness too! It’s great for adding flavor to just about everything.
