Raspberry Pomegranate Pear Salad

Description

Sweet, juicy pears over salad greens with sweet-tart raspberries and pomegranate seeds, crunchy pistachios, creamy seasoned goat cheese crumbles, and salty smoked bacon with a lovely maple dijon dressing, this festive holiday salad is a feast for the eyes AND the taste buds! It’s everything you want in a holiday salad.


Ingredients

  • Salad greens
  • Ripe, juicy pears, cored and sliced 
  • Fresh raspberries
  • Pomegranate seeds
  • Crumbled goat cheese or blue cheese
  • Toasted walnuts and/or salted/roasted pistachios
  • Bacon, cooked & crumbled (optional, but great for adding a bit of salty goodness to this sweet salad) 
  • Maple Dijon Vinaigrette (recipe here) or alternate dressing of choice

Instructions

  1. Fill your salad bowl 75% with greens, or line your salad plate(s) with lettuce. Fan the pear slices over the lettuce (or alternatively, chop the pears into chunks and sprinkle them over the greens.)
  2. Add raspberries, sprinkle with pomegranate seeds, cheese crumbles, bacon (if using) and nuts. 
  3. Drizzle with dressing and enjoy!
