Soft & Chewy Peanut Butter Brownie Power Bars

Ingredients

  • 2/3 cup PBFit or other powdered peanut butter
  • 1/4 cup water
  • 2 Tablespoons real maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup oat bran
  • 1/3 cup dextrin fiber powder (such as Benefiber … not psyllium)
  • 23 Tablespoons dark cocoa powder

Instructions

  1. Line a small rectangular pyrex dish or 9×5 in loaf pan with parchment paper.
  2. Stir together all the ingredients in a medium mixing bowl. You might have to use your hands at the end to finish mixing. It might look like the bars won’t stick together, but they should start to come together once everything is mixed well. If not, add a tiny bit of water. Taste and add some stevia or your preferred sweetener if more sweetness is desired.
  3. Press the mixture into the pan and set in the fridge for 2 hours. Pull out the parchment paper and cut into 12 bars.

Notes

If you don’t have or don’t want to use oat bran, you can use oatmeal in its place. Also, you can substitute oat bran (or oatmeal) for the fiber powder, but you’ll need a little extra water or maple syrup then. Nutrition content will change if you make substitutions.
