Bailey’s Irish Cream Mousse

Ingredients

  • 4 oz. mascarpone cheese
  • 1/2 cup whipping cream
  • 3 Tablespoons powdered sugar
  • 1 Tablespoon dark cocoa powder
  • 2 Tablespoons Baileys Irish Cream
  • 1 teaspoon vanilla


Instructions

  1. In a small mixing bowl with an electric beater, whip the mascarpone cheese and whipping cream together until they start to look like whipped cream and you can see the tracks of the beaters in the mousse.
  2. Add the powdered sugar, cocoa powder, Irish cream and vanilla and beat a bit longer, scraping the sides of the bowl to get it all incorporated and smooth.
  3. Pipe or spoon into dessert glasses or on top of chopped fruit or poached pears. If desired, top with chocolate shavings or a bit of whipped cream. Enjoy immediately or refrigerate for later.

Notes

You can also scoop out the center of a strawberry, fill with mousse, then dip the top in melted chocolate to seal in the mousse. Or use this mousse inside of a crepe with some sliced strawberries.
