Dragon Noodles

Ingredients

For the fiery dragon sauce:

  • 1/4 cup pineapple juice
  • 12 Tablespoons soy sauce
  • 2 Tablespoons Sriracha (or to taste. I used my homemade Sriracha – recipe here)
  • 2 teaspoons peanut powder or peanut butter
  • 1/21 teaspoon fish sauce (optional)
  • 1/21 teaspoon honey

For the noodles:

  • 2  oz. brown rice or whole wheat noodles 
  • 1/22 teaspoons hot pepper oil
  • 12 teaspoons sesame oil
  • 1/2 of a medium sweet onion, sliced thin
  • 24 cloves garlic, peeled & chopped
  • 3 oz. shredded cabbage (red or green)
  • 34 oz. bok choy, stems separated from the leaves and chopped
  • 1/2 of a sweet bell pepper, cut into strips
  • 12 eggs
  • 1/31/2 cup leftover rotisserie or salsa chicken, chopped
  • For garnish: sesame seeds and/or chopped roasted peanuts or cashews, cilantro leaves

Instructions

  1. In a small bowl, whisk together the sauce ingredients. Taste and adjust seasonings to your liking and set aside.
  2. Cook the noodles according to package directions. 
  3. While the noodles are cooking, in a wok or large saute pan, heat the hot pepper oil and sesame oil over medium heat. Add the onions and cook until soft and translucent, then stir in the garlic, cabbage, chopped bok choy stems and bell pepper strips. Saute until the cabbage and peppers are soft and the bok choy stems are crisp tender.
  4. Make a well in the center, add a bit of oil, crack the egg(s) in and scramble them, then stir them into the mixture. Add the chicken and sauce and toss to coat. Cook until the chicken is hot, then stir in the bok choy leaves. Taste and add soy sauce, salt or Sriracha to your liking. Serve warm garnished with sesame seeds or chopped nuts and fresh cilantro leaves. Enjoy!

Notes

For extra fire, use more hot pepper oil or toss in some finely chopped hot peppers of choice into the sauce.

For a lower carb option, use zoodles in place of the noodles. Add them to the stir fry instead of boiling.
