A delightful meal that is simultaneously savory and sweet, juicy and crunchy, tangy and cheesy, this unique combination of ingredients makes an incredible meal that comes together in minutes!
Ingredients
- 1 tortilla of choice
- 1/2 – 3/4 cup shredded queso quesadilla
- About 1/3 cup chopped leftover chicken
- 1/2 of a ripe, juicy pear, cored and chopped into chunks
- A bit of gorgonzola or blue cheese, crumbled (a little goes a long way!)
- About 2 teaspoons avocado oil
Instructions
- Prep your ingredients. Start to heat a frying pan over medium heat and coat the bottom lightly with avocado oil.
- Set the tortilla in the pan, cover half of it with the shredded queso quesadilla, then chunks of chicken, then tuck in the pear chunks. Top with crumbled gorgonzola and a bit more queso quesadilla, then fold the empty half over top.
- Cover and let cook until the bottom is crispy and golden brown. Drizzle a bit of avocado oil on the top half, then flip it to brown the other side. Cover again for a few minutes, then remove from heat, cut and enjoy!
Notes
For extra flavor, use some chopped cooked onions, peppers and/or mushrooms mixed in with the chicken. My chicken was cooked in onions, peppers and mushrooms, so some of that yumminess got tucked in along.
