Zucchini Apple Bread

Description

Tender, moist and flavored with apples with crunchy bits of walnut throughout, this lightly sweetened zucchini apple bread is lovely with coffee or tea (especially chai!). 


Ingredients

Scale
  • 2 cups finely chopped zucchini
  • 2 cups finely chopped apple
  • 3 eggs
  • 1 Tablespoon vanilla
  • 1 cup sugar
  • 3 1/4 cups whole wheat flour
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • A pinch of each: cloves, nutmeg, cardamom
  • 1/2 cup butter, melted (1 stick)
  • 1 cup chopped toasted walnuts or pecans

Instructions

  1. Preheat the oven to 350 F. and spray 2 8×4 inch loaf pans with cooking spray.
  2. Use a mini food processor to chop up the zucchini and apples. Pour them into a large mixing bowl, then stir in the eggs, vanilla and sugar until well mixed. Add the dry ingredients and stir just until mixed, then fold in the melted butter and the nuts (reserving a few nuts for the top). 
  3. Divide the batter between the two pans and sprinkle with the reserved nuts. Bake at 350 for 45 – 55 minutes or until a wooden pick or knife inserted in the center comes out clean. Let cool before slicing.

Notes

  • To make this recipe egg-free: use chia or flax eggs in place of the eggs
  • To make this recipe vegan: use chia or flax eggs and substitute melted coconut oil for the butter
  • To make this recipe gluten free: use gluten free flour mix or brown rice flour in place of the whole wheat flour
