Bacon, Egg & Tomato Tapenade Sandwich

For each sandwich:

  • 1 slice bread (I used my dad’s whole wheat yogurt bread)
  • 3 slices lean bacon, cooked, with the excess fat towelled off
  • A few slices of white cheddar cheese
  • 1 egg
  • About a tablespoon or so of Roasted Pepper Tomato Tapenade
  • Mixed greens

Instructions

  1. Toast the bread lightly, then arrange the strips of bacon on the bread to cover it. Lay the slices of cheddar cheese on top of the bacon, covering the bacon as well as you can, then set the bread on a baking sheet and set in the oven at 400 for about 10 minutes or until the cheese is nicely melted and bubbly.
  2. While the cheese is melting, cook an egg over-easy.
  3. Place the bread with melted cheese on a plate, slide the cooked egg on top, slather with Roasted Pepper Tomato Tapenade, and top with mixed greens.
  4. Serve immediately.
