Chipotle Cheddar Bay Biscuits

Dry ingredients:

  • 1 cup all purpose flour
  • 1 cup white whole wheat flour
  • 1 Tablespoon sugar
  • 1 Tablespoon baking powder
  • 2 teaspoons garlic powder
  • 1/41 teaspoon chipotle powder
  • 1/2 teaspoon salt
  • 1 cup shredded extra sharp cheddar cheese

Wet ingredients:

  • 1/4 cup nonfat Greek yogurt
  • 1 1/4 cups low fat milk
  • 6 Tablespoons butter, melted

Topping:

  • 2 Tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dry parsley or 1 Tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 450 F. Line a large baking sheet with a silicon baking mat or spray with cooking spray.
  2. In a medium mixing bowl, mix together the dry ingredients.
  3. In a separate, smaller bowl, whisk together the yogurt and milk, then whisk in the melted butter.
  4. Stir the wet ingredients into the dry ingredients until the dough comes together into a thick, sticky dough.
  5. Drop 1/4-cup-size-ish chunks of the dough onto the baking sheet, leaving a couple inches between the biscuits. While the biscuits are baking, melt the butter with the garlic & parsley and stir well.
  6. Bake at 450 for 10 – 12 minutes or until golden brown. Brush with the buttery topping and serve while they are still warm.
