Chocolate Peanut Butter Breakfast Bars

Ingredients

  • 1 cup natural peanut butter
  • 1 tablespoon honey
  • 1/4 cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 egg
  • 1 cup old fashioned rolled oats
  • 1/2 cup oat flour (ground oats), plus 2 tablespoons
  • 1/4 cup powdered peanut butter (I used PB2)
  • 1/4 cup vanilla protein powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3/4 cup milk
  • 1/4 cup roasted peanuts, roughly chopped
  • 1/2 cup dark chocolate chips
  • For the top: 1/4 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350 F. Spray a 9x9x2 inch square baking pan with cooking spray.
  2. Put the peanut butter in a large mixing bowl and microwave on high for 30 seconds to soften it. Stir in the honey, then the vanilla and egg until well mixed.
  3. Add the dry ingredients and stir to mix, then stir in the milk, then the peanuts & dark chocolate chips. Pour the batter into the prepared pan and sprinkle with mini chocolate chips.
  4. Bake at 350 F. for 20 – 25 minutes or until the edges are nicely browned and a toothpick inserted in the center comes out clean.
