Chocolate Pear Cobbler

Ingredients

  • 35 fresh pears, peeled and chopped
  • 1/2 teaspoon vanilla
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup sugar
  • 1 Tablespoon dark cocoa powder
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 stick butter, melted
  • 1 square of baker’s chocolate, melted
  • For the top: Chocolate syrup, for drizzling

Instructions

  1. Preheat the oven to 375 F. Spray a 9-inch casserole or equivalent-sized oven-proof bowl with cooking spray (or individual ramekins).
  2. Peel and chop the pears and set them in a bowl. Toss with vanilla, cover and set aside.
  3. In a small mixing bowl, mix the flour, baking powder, salt, cinnamon, sugar and cocoa powder. Stir in the milk, vanilla, melted butter and chocolate just until mixed.
  4. Pour the batter into the prepared baking dish and “plippity plop” the pears on top. Make sure you pour all the yummy juices on top, too.
  5. Bake at 375 for 35 – 40 minutes or until the cobbler is golden brown on top and nicely cooked in the middle. (For individual ramekins, bake for about 25 – 30 minutes.) Test the middle of the cobbler with a wooden pick or knife … it should come out completely clean. If it’s not clean, bake 5 minutes longer and test again. I usually bake mine a few minutes longer after it comes out clean, just for good measure. You don’t want to under cook this cobbler.
  6. Serve warm with a little drizzle of chocolate syrup (a little scoop of ice cream on top would be divine too).
