Creamy Cucumber Fennel Salad Dressing

Ingredients

  • 1/2 cup chopped cucumber, seeds removed
  • 1/2 cup (packed) fennel fronds, snipped
  • 2 – 3 cloves garlic, peeled
  • 1 cup plain Greek yogurt
  • 1/4 cup light mayonnaise
  • 1/2 teaspoon lemon zest
  • 2 teaspoons rice vinegar or lemon juice
  • Salt & freshly ground pepper, to taste


Instructions

Blend all ingredients in a mini food processor. Add salt & pepper to taste. Drizzle over salads, salmon, pork, chicken, potatoes or use as a dipping sauce for fries or veggies. Store in a sealed container in the fridge.
