Georgia Peach Cobbler for Two

Description

Saucy sweet peach filling laced with bourbon, vanilla and cinnamon, with a buttery brown sugar whole wheat biscuit topping that’s crunchy on the top and soft and wonderfully tender underneath, this peach cobbler tastes rich and decadent and is perfectly portioned for two.

For the filling:

  • 2 cups fresh peach slices (peeled)
  • 2 Tablespoons brown sugar
  • 1 Tablespoon bourbon or whiskey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • Pinch of salt

For the topping:

  • 1/4 cup white whole wheat flour
  • 2 Tablespoons brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1 1/2 Tablespoons cold butter, cut into small pieces
  • 1 Tablespoon milk

Instructions

  1. Preheat oven to 425 F. Put the peaches in a small mixing bowl, then sprinkle the rest of the filling ingredients over top. Stir to mix. Pour the peach mixture into an oven safe bowl, using a spatula to clean out all the saucy goodness into your baking bowl.
  2. Set the peach-filled bowl in the oven to bake for about 10 minutes while you mix up the topping. In the now-empty mixing bowl, stir together the  flour, brown sugar, baking powder, cinnamon and salt. Add the butter and use your fingers to blend together the butter with the flour until the mixture is a course meal. Stir in the milk just until combined.
  3. Remove the peaches from the oven, stir to get the top peaches nice and saucy, then drop little spoonfuls of the biscuit topping on top. Bake for 20 – 25 minutes or until nicely crisp and browned on top. Let cool slightly, then enjoy warm with vanilla ice cream or whipped cream.

Notes

You may want to place the bowl on a rimmed baking sheet to catch any drips in case your peachy filling bubbles over. (Mine did!)
