Georgia Peach Cobbler for Two

Do you ever see something happen on the news and feel a burst of gratitude for the state where it happened and then suddenly get a craving for something to honor that state? This is not something that usually happens in my life, but it did this week. As we anxiously awaited the results of the election, for a little while all eyes turned to Georgia and what was happening there made my heart fill with gratitude and joy for all the voters who turned out to make their voices heard. It is such a close race in that state that still hasn’t been called either way, but it gave me a glimmer of hope in a time when my heart was filled with dread and fear.

I had to run out and buy peaches to make my peach cobbler, though, and with my busy week at work, I didn’t get to the store until Saturday. On Saturday morning, as my (adult) kids and I were sitting together at the table sipping on our coffee and my kids were eating their bagels, they called the election. We cried tears of joy … okay, actually, my daughter and I cried tears of joy. My son was dry eyed, but we were all so happy. We sat together and watched cheering crowds and happy banter about what the future might look like. I really can’t remember an election EVER having this kind of joyful impact on my heart. It was hard to tear myself away from the moment to go to the store, but eventually we all had had enough, so I donned my COVID mask and went and did our weekly grocery shopping.

Now it’s Sunday morning. I woke up and those three peaches I bought at the store were just waiting for me. I couldn’t wait to taste my peach cobbler! Sadly, even though these peaches looked and felt like they were ripe, they certainly were far from the juicy sweet peaches in my Georgia dreams. I was determined, though, and hopeful that they would taste better once they were all properly cooked up into a nice warm cobbler.

Because we’ve had issues finishing desserts with the limited people we see during this pandemic, I decided to make a small batch of cobbler, and settled on using just two of my giant peaches. I scaled down the recipe I’d found at AllRecipes and added my own little twists to it and was SUPER excited when I pulled out the warm, bubbly bowl of goodness from the oven. It looked SO good! I had to pause a moment to take photos for you, dear readers, but I really couldn’t WAIT to dig in!

It was even better than I had dreamed: rich and fruity and the cobbler topping had that lovely little brown sugary crust on top, which yielded to a soft, tender sweet biscuit. Gone were the sad peaches I’d peeled and cut, and in their place were tender slices of pretty peaches, like someone had swapped them in the oven for REAL Georgia peaches. All the alcohol in the whiskey had (of course) cooked off, but there’s something a little magical about the flavor it left behind.

I ate up roughly a third of the cobbler before my little tum said “enough”. When my daughter arose, I told her I’d made her some peach cobbler and she happily had a nice portion of it for her breakfast. Still we have about a fourth of it left, so if you have light eaters, perhaps this is peach cobbler for three? Well, you can make it and decide for yourself.

Description

Saucy sweet peach filling laced with bourbon, vanilla and cinnamon, with a buttery brown sugar whole wheat biscuit topping that’s crunchy on the top and soft and wonderfully tender underneath, this peach cobbler tastes rich and decadent and is perfectly portioned for two.


Ingredients

For the filling:

  • 2 cups fresh peach slices (peeled)
  • 2 Tablespoons brown sugar
  • 1 Tablespoon bourbon or whiskey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • Pinch of salt

For the topping:

  • 1/4 cup white whole wheat flour
  • 2 Tablespoons brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1 1/2 Tablespoons cold butter, cut into small pieces
  • 1 Tablespoon milk

Instructions

  1. Preheat oven to 425 F. Put the peaches in a small mixing bowl, then sprinkle the rest of the filling ingredients over top. Stir to mix. Pour the peach mixture into an oven safe bowl, using a spatula to clean out all the saucy goodness into your baking bowl.
  2. Set the peach-filled bowl in the oven to bake for about 10 minutes while you mix up the topping. In the now-empty mixing bowl, stir together the  flour, brown sugar, baking powder, cinnamon and salt. Add the butter and use your fingers to blend together the butter with the flour until the mixture is a course meal. Stir in the milk just until combined.
  3. Remove the peaches from the oven, stir to get the top peaches nice and saucy, then drop little spoonfuls of the biscuit topping on top. Bake for 20 – 25 minutes or until nicely crisp and browned on top. Let cool slightly, then enjoy warm with vanilla ice cream or whipped cream.

Notes

You may want to place the bowl on a rimmed baking sheet to catch any drips in case your peachy filling bubbles over. (Mine did!)
