Ham & Broccoli Breakfast Scramble Supreme

Ingredients

  • 1 teaspoon butter
  • 1/4 cup chopped sweet onion
  • 3 oz. frozen broccoli, thawed and chopped into small chunks
  • 3 oz. fresh sweet cherry tomatoes, halved or quartered
  • 2 very thin slices of lean ham, chopped (I used black forest thin sliced ham from Aldi)
  • 2 eggs
  • 1 oz. shredded Italian cheeses
  • Red Robin Seasoning (or your favorite seasoned salt) & freshly ground pepper

Instructions

  1. Heat a small frying pan over medium heat and smear the bottom of the pan with butter. I like to take a stick of butter and just lightly rub it all over the bottom of the pan, so you use about 1 teaspoon total butter.
  2. Add the onion and saute for a few minutes until the onion is soft and translucent.
  3. Add the broccoli, tomatoes, and ham. Crack the eggs over top. Sprinkle with cheese and then the seasoned salt and the pepper.
  4. Use a spatula to break the eggs and mix together the ingredients. Cook for a few minutes, stirring frequently, until the eggs are cooked.
  5. Remove from heat and enjoy!
