Mandarin Chicken Avocado Salad

Description

Shredded Asian seasoned chicken with mandarin oranges, avocado, sweet peppers and onions, sunflower seeds and cilantro over greens with an Asian Ginger Peanut Dressing, this meal in a salad will satisfy all your senses. The bright vibrant colors are a treasure for the eyes, the flavors and texture variation are a total treat for the taste buds, the fresh citrus scent and the comforting smell of the warm ginger and chicken provide pleasing stimulation for the nose, and the protein and nutrients in the salad awaken and nourish your body.


Ingredients

For the Asian Ginger Peanut Dressing:

  • 4 Tablespoons PBfit or PB2 (or other peanut butter powder)
  • 1 Tablespoon soy sauce
  • 1 Tablespoon rice vinegar
  • 2 Tablespoons coconut milk
  • 1 – 4 teaspoons Sriracha (or more, to taste)
  • 1 – 2 cloves fresh garlic, peeled & chopped fine
  • 1 1-inch chunk of fresh ginger root, grated
  • 1/2 teaspoon sesame oil

For each salad:

  • Greens of your choice–romaine, spinach, and/or spring greens (about 2 cups per serving)
  • 23 fresh mandarin oranges (cuties), sliced horizontally — or sub a small can of mandarin oranges
  • Sweet or red onion slices (optional) – or chopped green onion
  • Sweet mini peppers (or bell peppers), seeded and chopped
  • Fresh cilantro leaves, chopped (or parsley)
  • Sunflower seeds or chopped peanuts
  • About 1/2 cup shredded Asian Peanut Chicken (recipe here) … or see notes for substitutions

Instructions

  1. In a small mixing bowl, whisk together the dressing ingredients.
  2. For each serving, fill a dinner-size salad bowl about 3/4 of the way with greens. Top with oranges, onion, peppers, cilantro, sunflower seeds or peanuts and warm chicken. 
  3. Drizzle with the dressing and enjoy!

Notes

To substitute leftover chicken for the Asian peanut chicken, make extra dressing. Shred the chicken and toss with some of the Asian Peanut Dressing. If desired, add sauteed onions and chopped sweet peppers.
