Maple Cinnamon Grilled Peaches (& Pineapple)

Ingredients

  • Fresh pineapple slices (if desired … I did 4 pineapple slices)
  • Fresh, ripe peaches (I used 3)
  • Real maple syrup (about 3 Tablespoons for 3 peaches, 4 pineapple slices)
  • Cinnamon sugar (if desired)
  • For serving: vanilla ice cream or vanilla greek yogurt
  • For garnish: fresh berries and/or fresh mint leaves and an extra drizzle of maple syrup

Instructions

  1. Prep the grill by cleaning all the gunk off the cooking surface well with a scrubber or other cleaning tool. Light up the grill or start the charcoal.
  2. When the grill is hot, spray the grate with cooking spray or brush lightly with melted butter.
  3. Brush the pineapple slices on one side with maple syrup, covering the entire surface, then set the slices on the grill, syrup-side down, and brush the top side to completely coat the pineapple slices in a light coat of syrup. (This seals in the moisture.) Let cook for about 5 minutes or until the bottom is lightly browned.
  4. Cut the peaches in half and remove the pits. (Do NOT peel!) Brush the cut side of the peaches with maple syrup, covering the entire surface. Sprinkle with cinnamon sugar if desired.
  5. Turn the pineapple over and cook the other side. Set the peaches, cut side down, on the grill. Let cook for about 5 minutes or until the bottom is lightly seared and the peach is softened.
  6. Remove from grill, cut the pineapple into chunks. To serve, set a half peach in a bowl, add a scoop of ice cream or yogurt, then tuck in some pineapple chucks. Drizzle with a bit of real maple syrup, then garnish with a few fresh berries and/or fresh mint leaves.
