Maple Roasted Beets ~ beets take on a total different flavor dimension when roasted with a onion and maple syrup

Maple Roasted Beets

Ingredients

  • 23 beets (or one gargantuan one), peeled & chopped into 1/2 inch cubes
  • 1 large sweet or red onion, peeled & thinly sliced
  • 23 garlic cloves, peeled & chopped
  • 2 Tablespoons olive oil
  • 1 Tablespoon real maple syrup
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 350 F. Spray a large baking sheet with cooking spray or brush lightly with olive oil.
  2. In a medium mixing bowl, toss together the beets, onions, olive oil, maple syrup and salt until all the veggies are coated in oil and well mixed.
  3. Spread the mixture out over the prepared pan and bake for 45 – 60 minutes, stirring every fifteen minutes or until the beets are tender and the onions are caramelized.
  4. Enjoy immediately or keep in a sealed container in the fridge until serving time. A little crumbled honey goat cheese is marvelous on top.
