Melt in your Mouth Peanut Butter Fudge

Ingredients

Scale
  • 8 oz. (2 sticks) unsalted butter, cut into chunks
  • 1 cup smooth peanut butter
  • 2 teaspoons vanilla extract
  • 1/41/2 teaspoon salt
  • 1/4 teaspoon cayenne
  • About 1 lb. powdered sugar

For the top: toffee bits & mini chocolate chips


Instructions

  1. Prepare an 8×8 or 9×9 inch square pan by spraying with cooking spray and lining with parchment paper, pushing the paper into the corners. Spray the paper with cooking spray as well.
  2. In a medium/large microwave-safe mixing bowl with plenty of room for expansion, cut up the butter into chunks, add the peanut butter and microwave on high for 2 minutes. Stir well, then microwave for two more minutes. The mixture will have expanded a lot and will be very hot and bubbly so take care when removing from the microwave!
  3. Stir in the vanilla, salt, cayenne and then the powdered sugar, a bit at a time, until the mixture looses its shininess and it is quite hard to stir. Pour this mixture into the prepared pan and press down with your hands to smooth it out.
  4. While it’s still warm, top with toffee bits and mini chocolate chips, pressing down gently to embed the toppings into the fudge.
  5. Let cool in the fridge or a cool place until the fudge is completely cool and hardened. Cut into 1 inch squares. Store in an airtight container in a cool place until serving time.
