My Son’s Butter Scrambled Eggs


Ingredients

  • 1/2 teaspoon of butter
  • 23 eggs
  • Salt & pepper, to taste

Instructions

  1. Beat the eggs well in a bowl and sprinkle with salt and pepper. (I like to add some Red Robin Seasoning and about a Tablespoon of water per egg, but my son likes to make his eggs with just salt & pepper).
  2. Heat an omelet pan (or frying pan) over medium to medium high heat. When the pan is hot, put the pat of butter on the pan and move it around so the whole pan gets a light coating of butter.
  3. Pour in the eggs and let them cook for a minute or two, until they start to set up.
  4. Use a spatula to push the outside edges in, letting the uncooked egg spill over the sides into the pan. Stir the eggs about in the pan, sort of flipping them over a bit to get them all cooked.
  5. Slide the butter scrambled eggs onto your plate and enjoy.
