Pumpkin Apple Oat Muffins

Ingredients

Wet ingredients:

  • 1/4 cup grass-fed butter, melted
  • 1/4 cup plain yogurt
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1 Tablespoon maple syrup
  • 1 teaspoon vanilla
  • 1/4 cup finely chopped apples

Dry ingredients:

  • 1 1/2 teaspoons pumpkin pie spice
  • 1 cup oat bran (or old fashioned oats, finely chopped)
  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins (optional):

  • 1/2 cup craisins (or raisins)
  • 1/2 cup chopped, toasted walnuts (or other nuts of choice)

Instructions

  1. Preheat the oven to 400 F. Spray a muffin tin with cooking spray or line with paper liners.
  2. In a large mixing bowl, mix the wet ingredients until completely mixed.
  3. Sprinkle the dry ingredients over top and stir just until mixed. (Batter will be thick.) Fold in the craisins and nuts. Divide the batter amongst the 12 muffin spots. If desired, sprinkle the tops with a little raw (turbinado) sugar or brown sugar and a few chopped walnuts.
  4. Bake at 400 F. for 17 – 20 minutes or until a wooden pick inserted in the center of a muffin comes out clean.

Notes

  • For gluten free muffins, use gluten free brown rice flour in place of the whole wheat flour.
  • If you don’t have oat bran, whiz some oats in the food processor to chop them into little bits.
