Pumpkin Pecan Baked Oat Bran

For the pumpkin baked oat bran:

  • 1 1/2 cups pumpkin puree
  • 1/4 cup real maple syrup
  • 3/4 cup Silk coconut milk (or milk of your choice)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat bran (or oatmeal)
  • 1/4 cup PBFit, PB2 or almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 46 stevia packets (optional)
  • 3 oz. toasted pecans or walnuts

For the maple cream cheese drizzle:

  • 3 oz. Neufchatel cheese, softened
  • 2 Tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice

Instructions

  1. Preheat the oven to 350 F. Spray a 9x9x2 inch square baking pan with cooking spray.
  2. In a medium mixing bowl, stir together the pumpkin, maple syrup, coconut milk, egg and vanilla until well mixed. Stir in the remaining ingredients. Spread the mixture evenly into the prepared pan.
  3. Bake at 350 for 30 – 35 minutes or until set in the middle and lightly browned.
  4. While the oats are baking, stir together the maple cream cheese ingredients in a small bowl. Drizzle with the maple cream cheese mixture and enjoy!
