Spanakopita Wontons

Ingredients

  • 1 Tablespoon extra virgin olive oil (plus more for brushing) – best to use the olive oil from the marinated feta
  • 1 medium onion, peeled & chopped
  • 34 cloves garlic, peeled & chopped
  • 8 oz spinach, chopped (fresh – or frozen, thawed and drained)
  • 1/2 cup cottage cheese
  • 23.5 oz. feta cheese, crumbled (I highly highly recommend marinated feta – recipe here)
  • 2428 wonton wrappers

Instructions

  1. Swirl the olive oil in a medium saucepan over medium heat, then add the chopped onion and cook until soft and translucent. Stir in the garlic for a few minutes until fragrant, then the spinach.
  2. Cover until the spinach leaves are wilted, then stir in the cheeses. Put the mixture in a strainer over the pot or the sink and push down slightly to remove any excess juices.
  3. To shape the wontons: Put a spoonful of filling in the middle of the wonton wrapper. Wet the edges with your finger, then pull two points up and press together. Press edges together to make a triangular shape. Brush both sides with olive oil and bend the pointy edges over. Repeat.
  4. Preheat the air fryer, then air fry at 370 F. for about 4 minutes or until browned and crispy. Make sure you leave space around the wontons so the air can circulate around them. You may have to work in batches.
