Sumptuous Seafood Dip

Description

A trifecta of shellfish along with butter, garlic, cheeses, mayo, celery, capers, lemon and seasonings make this seafood dip a sumptuous delight! Make this for your next party and everyone will be happily dipping away.


Ingredients

Scale
  • 1 Tablespoon grass-fed butter
  • 1/2 of a sweet onion, peeled & finely chopped (about 3/4 cup)
  • 24 cloves garlic, peeled & finely chopped
  • 1 celery stalk, chopped fine (about 1/3 cup)
  • About 4 mini sweet peppers, de-seeded, chopped fine (or 1/3 cup chopped red bell pepper)
  • 1 8-oz. package Greek cream cheese or Neufchatel
  • 1/4 cup shredded Italian cheese
  • 1 6-oz. can crab meat (or fresh lump crab meat)
  • 10 oz. mixed lobster and shrimp meat, pre-cooked (I used 4 oz. lobster, 6 oz. shrimp)
  • 1/4 cup Sir Kensington’s Avocado Oil mayonnaise
  • 2 teaspoons capers
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon fresh chopped basil (or 1/4 teaspoon dried)
  • 1/4 teaspoon dill
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon Italian Seasoning
  • Lemon pepper, to taste
  • Juice of half a fresh lemon

Instructions

  1. Melt the butter in a medium saute pan or frying pan. Heat until the butter is bubbly, then add the onions and garlic and saute for a few minutes, until the onion is soft and translucent. 
  2. Add the celery and saute a few minutes longer, then the chopped pepper and saute a bit longer.
  3. Reduce heat to low and add the cream cheese.  Stir occasionally, until the cream cheese is melted, then add the shredded cheese and stir.
  4. While the cheeses are melting, chop the lobster and shrimp into small bits. Drain the liquid from the crab (and if using lump crab, chop or shred the crab meat).
  5. Add the seafood, mayo, capers and seasonings to the cheese mixture in the pan and stir to mix. Add lemon pepper to taste and stir in the lemon juice.
  6. Serve warm or cold with a selection of dippers such as crackers, chips, carrot chips, celery sticks, cucumber slices, etc.
