Super Fudgy Gluten Free Brownies

Ingredients

  • 8 Tablespoons butter, melted
  • 1 cup sugar
  • 3/4 cup cocoa powder
  • 1 Tablespoon water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup brown rice flour
  • 1/4 cup tapioca flour
  • 1/2 cup good quality semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 F. Spray a 9×9 inch square baking pan with cooking spray.
  2. In a medium mixing bowl, mix together the butter, sugar and cocoa powder. Beat with an electric mixer or stir with a spoon until smooth and shiny.
  3. Add the water, salt, and vanilla and stir again till smooth. Stir (or beat) in the eggs, one at a time.
  4. Add the flours and the chocolate chips and mix until well blended. This will make a thick batter.
  5. Pour the batter into the prepared pan and smooth it out with a spatula. Bake at 350 for 30 – 35 minutes or until a wooden pick inserted in the center comes out clean.
  6. Let cool slightly and cut into squares.

Notes

I tried a little square while they were still warm from the oven (you know, just to make sure they were good enough for a birthday) and it was sooo good, so I would say you really don’t have to wait very long before cutting these brownies.
