Sweet Cranberry Apple Kale Salad

Ingredients

Scale
  • 2 cups kale leaves, deveined and chopped
  • 1 teaspoon olive oil
  • 1 apple, cored and chopped (and peeled, if you like)
  • 2 teaspoons orange juice
  • 1 teaspoon freshly grated ginger
  • 1 Tablespoon honey
  • 1/2 cup dried sweetened cranberries

For the top:

  • 1/4 cup toasted chopped walnuts or pecans
  • 2 Tablespoons goat cheese, crumbled

Instructions

  1. Put the kale leaves in a bowl, add the olive oil and toss, then massage the oil into the kale leaves. (This helps reduce the bitterness of the kale.)
  2. Add the apple, orange juice, ginger, honey, and cranberries and toss to mix completely. Cover and refrigerate until it’s time to eat.
  3. At serving time, sprinkle with toasted walnuts and goat cheese crumbles.
