Sweet Maple Pumpkin Spice Hummus

  • Yield: About 2 cups of hummus 1x

Ingredients

Scale
  • 1 cup pumpkin puree
  • 2 Tablespoons real maple syrup
  • 3 Tablespoons peanut butter
  • 3 Tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 15-oz. can of garbanzo beans (chickpeas), drained (or equivalent cooked, drained chickpeas)

Instructions

  1. In a handi chopper or food processor, blend all ingredients until smooth. Add water to get the desired consistency. (I added 2 Tablespoons.)
  2. Put the hummus in a bowl and drizzle with a bit of maple syrup and sprinkle with a bit of pumpkin pie spice. Serve with fresh apple slices, dried apple chips, pretzels, graham crackers or other crackers, fruit or cookies.
