Turkey Black Bean Fresh Mex Bowl

  • Yield: as many as you like!

Ingredients

For each Fresh Mex bowl:

  • About 1/4 cup Cilantro Lime Rice (Recipe here)
  • About 1/4 cup seasoned black beans
  • About 1/4 cup chopped, cooked turkey (or chicken)
  • About 1/4 cup cooked sweet corn
  • About 1 cup fresh chopped lettuce
  • About 1/4 cup shredded Mexican blend of cheese
  • Fresh cilantro leaves
  • Fresh garden tomato, chopped or cherry/grape tomatoes, cut in half
  • Wedges of lime
  • Your favorite salsa (I used my Copycat Chili’s salsa with added cilantro-recipe here)

Instructions

  1. Heat the rice, beans, turkey, and corn.
  2. For each serving, arrange the rice, beans, turkey, corn and lettuce in wedges of the bowl.
  3. Top with cheese, tomatoes and cilantro and serve with salsa and wedges of lime.
  4. Enjoy!

Notes

Avocado or guacamole would be an excellent addition to the bowl.
