Zucchini Tuna Melts: The Surprising Healthy Flavor Bomb You’ll Crave

Ingredients

  • Zucchini, sliced horizontally in 1/2 inch rounds
  • Olive oil, Red Robin Seasoning and Trader Joe’s 21-seasoning salute (or simply salt & pepper)
  • Tuna salad (canned tuna, drained and mixed with mayo & a bit of prepared mustard)
  • Aged cheddar cheese or Kerrygold Dubliner, sliced
  • Fresh, sweet garden tomatoes, sliced
  • Everything bagel seasoning

Instructions

  1. Preheat the oven, toaster oven or air fryer to 400 F. Cut as many slices from the zucchini as you want. Brush the zucchini with olive oil and sprinkle both sides with seasonings or salt & pepper.
  2. Air fry the zucchini for 5 minutes (or set them on a small baking sheet and roast for 15 minutes or so) or until tender & juicy.
  3. Smear a good measure of tuna salad on one side of each of the zucchini rounds and top with sliced cheese. Return to the oven or air fryer, or simply set on a plate and microwave until the cheese is melted.
  4. Top with fresh, juicy sweet tomato slices and sprinkle with everything bagel seasoning. Enjoy!
