Zucchini Tuna Melts: The Surprising Healthy Flavor Bomb You’ll Crave

Zucchini tuna melts are a juicy bomb of flavor that brings together creamy tuna salad and ooey gooey melted cheese with fresh juicy tomato. On top, everything bagel seasoning adds salty crunchy little sesame/onion/garlic flavors. Enjoy them as a low carb snack, appetizer or light meal. Not only do they taste fabulous, they also make you FEEL fabulous.

To love this recipe, you do NOT need to love zucchini. You do, however, need to at least like tuna salad, melty cheese, fresh sweet garden tomatoes and everything bagel seasoning. Together, these things create a symphony of creamy, juicy, ooey gooey cheesy goodness with a bit of crunch from the everything bagel seasoning on top. It’s really a sublime experience with a juicy mouthfeel that’s insanely addictive.

Why Zucchini Tuna Melts Rock


To be honest, these zucchini tuna melts are something I really didn’t expect to love. Even though I’ve been head-over-heels crazy in love with my beloved Triscuit Tuna Melts for over a year. I mean, I have been eating Triscuit Tuna Melts several times a week, sometimes multiple times a day. For breakfast, snacks, lunch, dinner. I told my son I’d be done eating them once the fresh garden tomatoes were gone, but I lied. I bought little sweet cherry tomatoes over the winter and continued making them ALL. Winter. Long.

When I decided to swap out the triscuits for zucchini, I was prepared to be disappointed. But instead, I was rewarded with a bursty mouthful of juiciness. I was seriously awed by the experience. It had all the other things I love about Triscuit Tuna melts, without the crunchy Triscuit. I expected I would miss the crunchy base. But this experience was eons above the Triscuit Tuna melts I’ve adored for so so long.

It takes slightly longer to make them, depending on what you’re using for cooking. So I do regress back to my old standby sometimes. But if you have an air fryer, you can roast the zucchini in about 5 minutes while you gather/prep the other things. All in all, it takes about 15 minutes, if you use the air fryer and have the tuna salad pre-made. Instead of 5 minutes for the Triscuit version. SO worth it if you have 10 extra minutes! And zucchini, of course.

Unlike Triscuit Tuna Melts, these are not finger food. Well, unless your zucchini are small and your hands and mouth are large. Mine are not. I use a fork to eat my zucchini tuna melts.

Saying Goodbye to the Garden

It makes me sad that I am all out of zucchini from my garden. And it’s getting cold out, so even though my zucchini plant bloomed just the other day, it’s not likely that little blossom will amount to anything. It’ll freeze tonight and that will be the end of it. Autumn always makes me sad as I say goodbye to my garden. All the beautiful green growth that happened over the summer withers, curls and dies away. As we anxiously await the spring when we can begin again.

I visited my parents this weekend, though, and they had LOTS of zucchini just sitting around the house, so I’m not quite zucchini destitute YET. Mom also found a couple monster zucchini hiding in the garden that I was happy to take. We worked hard harvesting and finishing up the last of their huge garden. We’re having a hard freeze the next few nights.

For now I’m good on zucchini. But someday I may have to resort to “gasp” buying zucchini? Usually I try to refrain from buying produce out of season. But zucchini is one of those things I miss so much in the off season.

Zucchini Tuna Melts: The Surprising Healthy Flavor Bomb You’ll Crave

Ingredients

  • Zucchini, sliced horizontally in 1/2 inch rounds
  • Olive oil, Red Robin Seasoning and Trader Joe’s 21-seasoning salute (or simply salt & pepper)
  • Tuna salad (canned tuna, drained and mixed with mayo & a bit of prepared mustard)
  • Aged cheddar cheese or Kerrygold Dubliner, sliced
  • Fresh, sweet garden tomatoes, sliced
  • Everything bagel seasoning

Instructions

  1. Preheat the oven, toaster oven or air fryer to 400 F. Cut as many slices from the zucchini as you want. Brush the zucchini with olive oil and sprinkle both sides with seasonings or salt & pepper.
  2. Air fry the zucchini for 5 minutes (or set them on a small baking sheet and roast for 15 minutes or so) or until tender & juicy.
  3. Smear a good measure of tuna salad on one side of each of the zucchini rounds and top with sliced cheese. Return to the oven or air fryer, or simply set on a plate and microwave until the cheese is melted.
  4. Top with fresh, juicy sweet tomato slices and sprinkle with everything bagel seasoning. Enjoy!
