Mushroom Crab Cakes

Ingredients

Scale
  • 3 oz. mushrooms, chopped fine (I recommend lion’s mane mushrooms)
  • 2 cloves garlic, peeled & chopped fine
  • 1 6-oz. can crab meat (or about 4 oz. lump crab meat)
  • 1/3 cup mayo
  • 1/2 cup panko bread crumbs
  • 1/43/4 teaspoon Old Bay Seasoning
  • 1/41/2 teaspoon dill 
  • 1  egg
  • Salt & pepper, to taste

Instructions

  1. In a small bowl, stir together all the ingredients, adding salt & pepper to taste. Then form the mixture into small patties about 2 inches wide.
  2. Heat a medium frying pan over medium heat and coat the bottom of the pan with a neutral, heart healthy oil like avocado oil.
  3. Cook the crab cakes until browned on the bottom, then flip and cook the other side. Enjoy!

Notes

Lion’s mane mushrooms are perfect for this recipe because they have a crab-like texture and flavor. Lobster mushrooms would be great as well, but if you don’t have these specialty mushrooms on hand, feel free to use other fresh edible mushrooms.

If you need to reheat leftovers, warm them gently in the frying pan again until warm.
