Mushroom Crab Cakes are Ready in a Jiffy

These crab cakes laced with the delightful umami of mushrooms are so quick and easy to make! Simply mix all of the ingredients together in a bowl, shape into patties, then pan-fry them in a heart healthy oil. Serve them up hot with the dipping sauce of your choice.

They taste amazing with tarragon mustard sauce (recipe here), fresh crunchy cucumber and sweet juicy garden tomatoes. But they’d also be great with simple tartar sauce or a spicy creole remoulade. Serve them as an appetizer or on a bed of greens as a light lunch.

Best Father’s Day Gift EVER!


My dad adores mushrooms. We’ve been mushroom hunting for many years. So for Father’s Day way back in June, I found the BEST gift ever! I got him a mushroom kit in a bag. I found it at our local farmer’s market. Dakota Mushrooms and Microgreens sells several different varieties of exotic, beautiful mushrooms. And these super fun mushroom kits in a bag. I was lucky to get the last mushroom kit he had that day: a lion’s mane mushroom.

I knew nothing about lion’s mane mushrooms at the time, but we’ve learned a lot in the last two months! Dad kept sending me pictures as it grew. He researched when is the prime time to harvest it. When the “hairs” on the mushroom are about 1/4 inch long, then it’s time to enjoy.

The first harvest from that bag was one giant mushroom weighing over 2 lb! Dad shared some of his abundant harvest with me. Above is the picture he texted me, shortly before he harvested it. The mushroom has continued to grow since then. He harvested another (smaller) one. And now is about ready to harvest his third lion’s mane mushroom, which is about the size of a baseball.

Mushrooms are Perfect for Crab Cakes!

Dad says these lion’s mane mushrooms taste sweet like crab meat. So he made mock crab cakes with them, made with his lion’s mane mushrooms. Inspired by my dad, I thought I would make some crab cakes too. But for some extra crab flavor I added some real crab meat. The result was definitely delicious! I took my leftovers back up to share with mom and dad.

Since I live in SD and fresh crab is not readily available here, I used canned crab meat. If you have fresh crab, then by all means use it.

Lion’s mane mushrooms definitely add a lovely flavor to these yummy crab cakes. If you don’t have lion’s mane mushrooms, though, I think it would be fine to substitute another fresh mushroom. Different mushrooms will of course add different flavors. But hey, isn’t that part of the beauty of it?

Mushroom Crab Cakes

Ingredients

Scale
  • 3 oz. mushrooms, chopped fine (I recommend lion’s mane mushrooms)
  • 2 cloves garlic, peeled & chopped fine
  • 1 6-oz. can crab meat (or about 4 oz. lump crab meat)
  • 1/3 cup mayo
  • 1/2 cup panko bread crumbs
  • 1/43/4 teaspoon Old Bay Seasoning
  • 1/41/2 teaspoon dill 
  • 1  egg
  • Salt & pepper, to taste

Instructions

  1. In a small bowl, stir together all the ingredients, adding salt & pepper to taste. Then form the mixture into small patties about 2 inches wide.
  2. Heat a medium frying pan over medium heat and coat the bottom of the pan with a neutral, heart healthy oil like avocado oil.
  3. Cook the crab cakes until browned on the bottom, then flip and cook the other side. Enjoy!

Notes

Lion’s mane mushrooms are perfect for this recipe because they have a crab-like texture and flavor. Lobster mushrooms would be great as well, but if you don’t have these specialty mushrooms on hand, feel free to use other fresh edible mushrooms.

If you need to reheat leftovers, warm them gently in the frying pan again until warm.
