Smoky Turkey Spinach Sundried Tomato Sandwich

Ingredients

Scale
  • 2 thin slices of good bread (I used my homemade white whole wheat bread)
  • Thinly sliced smoked gouda cheese
  • Thinly sliced smoked turkey
  • Fresh baby spinach leaves
  • Thin slices of sweet pepper
  • Sundried tomato pesto (recipe here)
  • Butter (or trans-fat-free light butter)

Instructions

  1. Lightly butter one of the slices of bread and set it, butter side down, on the pan you are going to cook it on.
  2. Arrange slices of cheese to cover the bread, then cover with turkey, baby spinach and pepper slices. Take the top slice of bread and spread a good layer of sundried tomato pesto on the bottom side, setting that side down on top of the peppers. Spread a thin layer of butter on the top of the sandwich.
  3. Heat the pan over medium heat, covering the sandwich and then checking every couple minutes until the bottom of the sandwich is golden brown and the cheese is starting to melt. Flip the sandwich and again, watch carefully until it’s golden brown on the other side and the cheese is melted.
  4. Use a spatula to transfer the sandwich to a cutting board and cut as desired. Then set the sandwiches on your serving plates and chow down!
