Irish Baked Egg with Spinach in a Ramekin for One

Wake up on St. Patrick’s Day (or whenever) to this super simple Irish Baked Egg with Spinach in a cute little ramekin. A tiny, warm baked treasure just for you. There’s something about a baked egg done right that’s really satisfying.

You want to have enough liquid to kind of poach the egg while it’s baking, yet without having to try to fish the egg out of the water as it’s trying to spider its way all over the pan. Traditional poached eggs are hard. A ramekin keeps things so nice and tidy. For this Irish Baked Egg recipe I’ve kept it very simple, adding just spinach, cream (or milk), Irish cheese and a bit of tomato. I feel like this is very in keeping with the Irish style of cooking. Irish food is delicious, comforting, hearty and simple.


Of course, you can multiply this recipe for as many people as you want. But I want to say it’s absolutely okay to make this just for you if that’s what you want. Speaking from a mom that neglected my own joy for many, many years and almost lost myself in the process, I want to tell you it’s absolutely okay sometimes to just take care of YOU!

Most St Patrick’s Days (aside from when my dad was very sick), I like to find a NEW Irish recipe to post. Over the years it has gotten harder and harder to find something new and different to post. This year I decided to go simple. We happen to have fresh spinach on hand because my mom bought some spinach to take home with her just before we took her home. There was a doctor’s appointment before we left that ran long, so in the rush to get out the door, I totally missed the spinach. Oops! Mom said it’s my spinach now.

I think the Irish like to use cream in their baked eggs. I opted for milk. Go ahead and use cream if you prefer. I did use my favorite Irish Dubliner cheese which is sort of a cross between cheddar and parmesan, but an Irish cheddar would be lovely too.

Description

A super simple and delightful recipe you can make for yourself with just a few minutes of prep


Ingredients

  • A handful of fresh or frozen spinach leaves
  • About 1/2 oz. shredded Irish cheddar or Dubliner cheese
  • 1 – 2 Tablespoons milk or cream
  • 1 large egg
  • 2 – 3 sweet cherry or grape tomatoes, chopped
  • Bacon salt (or salt) & freshly ground pepper
  • Optional: Fresh parsley or chives


Instructions

  1. Oil a ramekin and place the spinach in the ramekin. Microwave for 30 seconds or until the spinach is wilted. If you want more spinach once it shrinks, simply take the spinach out that you’ve already wilted, add more and microwave again.
  2. Make a dent in the middle of the spinach so it’s piled more around the ramekin than in the middle. Sprinkle half of the cheese on, then add the milk or cream. Crack the egg into the center. Sprinkle with bacon salt (or salt) and pepper, then top with the rest of the cheese and the chopped tomato.
  3. Set the ramekin on an oven safe plate or baking sheet and bake at 350 F. for 15 – 20 minutes or until the white is completely set and the yolk is done to your liking. Sprinkle with fresh herbs if desired and enjoy!

Notes

If desired, add a bit of chopped cooked bacon or ham on top.
