Strawberry Rhubarb Crumble Bars: Summer in a Bar

What tastes like summer more than strawberries and rhubarb? Especially when baked up into these scrumptious Strawberry Rhubarb Crumble Bars. The crumb crust on the bottom also goes on top, so they’re really very simple to make and they taste SO good.

Every time we have strawberries and rhubarb, my son wants me to make these. I’ve made these bars for him on several occasions, but somehow never took the time to photograph and blog the recipe. So then each time I have to go look it up again. No more! This time I have it all recorded. This right here is now officially OUR recipe for Strawberry Rhubarb Crumble Bars.


Usually I try to stay away from the bars, but this time I convinced him to let me use part whole wheat flour and that is what got me hooked. I find myself craving them. Since we’re storing them in the fridge and it’s like 90+ degrees outside, they are the perfect little cool treat. I really love the flavor of the whole wheat crumble and also that they are lightly sweet. No sugar bombs here! Just the perfect blend of sour rhubarb, tangy strawberries, sweetness and crumble.

These bars have just enough fruity filling to remind you it’s summer and a good amount of crumble that keeps them from getting soggy even in the fridge. Days later they still taste perfect. I think they’d be perfect fare for a picnic or potluck in the park. Despite the name, they don’t crumble apart. They actually travel quite nicely.

I wanted a recipe that would bake in a 9x9x2 inch pan (for fewer servings) but yet also include both fruits. I searched far and wide and read a lot of the same recipe repeated over and over, most in a 13x9x2 inch pan. Finally I settled on a blend of these two recipes: this one from The Girl Who Ate Everything and the other from Cooking Classy. We are definitely reveling in the result.

So if you have some fresh strawberries and rhubarb on hand, give these bars a try. I think you’ll quite like them!

Ingredients

For  the crumb mixture:

  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon EACH: baking powder and salt
  • 1/2 cup cold butter, cut into small bits
  • 1 large egg
  • 1 teaspoon vanilla

For the fruity filling:

  • 2 cups strawberries, chopped into small bits
  • 1 cup rhubarb, cut into small bits
  • 1 teaspoon vanilla
  • 1/3 cup sugar
  • 1 1/2 Tablespoons cornstarch


Instructions

  1. Preheat the oven to 375 F. Prep a 9x9x2 inch pan by buttering, spraying with cooking spray or lining with parchment paper.
  2. In a medium mixing bowl, whisk or stir together the dry ingredients for the crumb mixture. Cut in the butter using a pastry cutter, two knives or your fingers. The mixture should resemble a fine crumb. Stir in the egg and vanilla until well mixed. Press 1/2 – 2/3 of the mixture into the bottom of the pan.
  3. In a smaller mixing bowl, mix together the filling ingredients. Spoon the fruity filling over the crust in the pan, avoiding the juices at the bottom of the bowl. (Use them for another purpose.) Sprinkle the remaining crumb mixture on top of the fruit.
  4. Bake at375 F. for 35 – 45 minutes or until the topping is lightly browned. Cool completely, then cut into bars and enjoy!

Notes

Instead of hand mixing, you can use a food processor to prepare the crumb mixture.

Store these bars in the fridge.
