How to Crunch-ify your Huevos Rancheros

Huevos Rancheros with a crunch factor! Taking a few minutes to air fry your corn tortilla before you load it with cheese, beans, spicy sauce and egg takes Huevos Rancheros to a whole new level of yum. Then I like to melt some cheese on the taco bowl to keep it crunchy well after I’ve loaded it with all the good stuff. Oh man is it GOOD! (Not to mention, quite pretty to look at as well.)

Huevos Rancheros is a simple hearty meal with simple origins. Farmers and ranchers in 16th century Mexico used to feed it to the farmers after they finished the early morning chores. The dish gave them the boost of energy and protein they needed for the rest of the work of the day.


Personally, I’ve long been a HUGE fan of Huevos Rancheros. Ever since my days in New Mexico where they would serve up eggs and beans on top of a tortilla smothered in green chile sauce. Alas, I no longer have green chiles. I have other hot peppers in my life now. And I still love to start my day with this simple hearty meal. But these days my sauce has changed. And frankly, the beans I use have changed too! Now I make my own refried beans in my Instant Pot. And I also love to make spicy lentil “chorizo”, which works great on Huevos Rancheros too.

Then I learned how to make tostada shells in the air fryer. And someone came along and commented a new method that I had never thought of. Instead of putting the metal measuring cup on top of the tortilla to hold it down, they put the tortilla on top of the cup, with a rack on top of it. So it makes a little taco bowl! That blew my mind and opened up soooo many new ideas. So that’s how these crunchy Huevos Rancheros entered my life. Honestly, it’s something I’ve been making for quite some time now. I’m so glad I’m finally sharing them with you.

To make the taco shell “bowl”, you’ll need a bit of equipment:

  • An air fryer
  • A 1-cup metal measuring cup
  • A small rack that’ll fit in your air fryer. The one that came with my Instant Pot works well.

What sauce to use on Huevos Rancheros?

To be honest, I don’t make my Huevos Rancheros with Ranchero Sauce, but of course that’s a delicious option! Lately I either use my green tomato enchilada sauce or my cilantro almond salsa. Both sauces taste so amazing that I have never felt the need to go try my hand at Ranchero Sauce. All you really need is a Mexican sauce that is spicy and flavorful. The sauce is key to good flavor, though, so choose one that makes your taste buds sing.

Huevos Rancheros with a Crunchy Good Shell

Ingredients

For each serving:

  • 1 corn tortilla
  • Avocado oil spray 
  • 1/3 cup shredded Mexican cheese
  • 1/3 cup refried beans or lentil chorizo (recipe here)
  • 1/4 cup ranchero sauce, green tomato enchilada sauce (recipe here), cilantro almond salsa (recipe here) or your favorite spicy Mexican sauce
  • 1 egg
  • Pico de Gallo, chopped lettuce and/or fresh cilantro, for garnish

Instructions

  1. Preheat the air fryer to 400 F. Spray a corn tortilla liberally on both sides with avocado oil – or brush the oil on both sides. Set a metal 1-cup measuring cup in the hot air fryer. Set the tortilla on top of it, then put your small rack on top of that. (This keeps the tortilla from flying around in your air fryer.) Set the temp to 380 F and air fry for about 4 minutes or until the shell is lightly browned and crunchy. 
  2. Use tongs to carefully remove the rack, shell and cup from the air fryer. Top the shell with cheese and put in toaster oven for about 3 minutes at 375 or microwave for 30 – 60 sec until the cheese is melted and bubbly.
  3. Meanwhile, warm the beans and sauce and fry your egg. Take the shell and smother it with beans, then the sauce, then put the egg on top. Garnish the top with pico de gallo and/or cilantro if you like. Enjoy!

Notes

Air fryer times vary, so you may need to adjust the cooking time to find the timing that works best in your air fryer.
