When I made that fabulous Sweet Carrot Ginger salad dressing, right after I’d enjoyed my first salad with it, I thought of salmon. Wouldn’t that dressing be perfect on salmon? I couldn’t wait to try it!

Well, it was just as good as I thought it was, although the dressing gave the salmon an orange hue where you expect to see pink. But that’s only on the outer crust … of course when you dig into it, you see the signature salmon pink.

Salmon is an amazingly simple thing to prepare well, too. The only trick to it is to watch it carefully. Thin slices of salmon will be done VERY fast, while thicker slices will take longer.  Because one side of the salmon tends to be fatter than the other, I like to bake my salmon at a lower temp to allow the thicker part to get done closer to the same time as the thinner side.

I seriously love that my low cholesterol diet is “forcing” me to eat salmon (or tuna) twice a week. Now I have the perfect excuse to pamper myself with salmon on a regular basis. One of my favorite salmon suppliers is Wild Alaskan and they’ll ship their wild-caught fish straight to your door.

If you don’t have cara cara oranges, feel free to substitute other oranges in the salad. Or if you want something other than salad, try serving this salmon on a bed of cilantro lime rice with a side of broccoli (or other veggies).

Sweet Ginger Sesame Salmon

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: 1 serving 1x

Ingredients

Scale

For the salmon, per serving:

  • 1 salmon fillet
  • 12 Tablespoons Sweet Carrot Ginger Dressing (recipe here)
  • About 1/41/2 teaspoon black sesame seeds (or substitute white sesame seeds)

For the salad, per serving:

  • About 11 1/2 cups mixed greens
  • 1/2 of a cara cara orange
  • 2 Tablespoons chopped walnuts, toasted
  • A few thin slices of sweet onion
  • About 1/4 of an avocado, cut into small pieces
  • About 2 Tablespoons Sweet Carrot Ginger Dressing
  • Extra sesame seeds

Instructions

  1. Preheat oven to 325 F. Line a baking sheet with a silicon baking mat.
  2. Sprinkle the salmon on both sides with salt & pepper, then use a brush (or knife) to coat the salmon on both sides with the dressing. Sprinkle the top with sesame seeds.
  3. Set the salmon on the prepared baking sheet and bake at 325 for 5 – 15 minutes or just until the salmon is flaky. Watch it carefully so the salmon doesn’t overcook.
  4. While the salmon is cooking, prep the salad. Line a plate or flat bowl with greens, top with oranges, onions, walnuts, avocados and sprinkle with sesame seeds.
  5. When the salmon is done, slide the salmon onto the salad and drizzle the salad with dressing as desired. Enjoy!
