The Best Bailey’s Irish Cream Mousse: Simplicity in Dessert Form

Light, airy and deliciously spoon-able, this no-bake Bailey’s Irish Cream Mousse takes just a few minutes to whip up (literally!). Laced with just a hint of chocolate and vanilla, the flavor of the liqueur really shines through. Without using any eggs or gelatin, you can easily create this delightful mousse. Scoop it up with a spoon or serve atop fresh fruit, poached pears or as a luscious filling for crepes. However you want to eat it, I think you’ll really enjoy this lovely dessert.

Last year, I feel like I missed all the fun holidays while my dad was sick. We lost Dad in May last year and life really just isn’t the same without him. He brought so much JOY to every meal! Because he just loved food and his family so so much.


So this year, I’m determined to celebrate my favorite holidays in little ways, with special foods like we always used to. St. Patrick’s Day has always been the time of year I look for new Irish recipes. This year, I don’t have any corned venison from my dad. While this makes me sad, I’m still determined to savor some delicious Irish food. Perhaps I’ll make some colcannon or corned beef and remember the good times we had together. Or maybe I’ll just munch on some crackers with Irish Dubliner cheese. And I will have THIS delectable Bailey’s Irish Cream Mousse for dessert!

I made this mousse this afternoon while my (adult) kids were making crepes. I sliced the strawberries for the crepes while my daughter made the batter. She started on the crepes and then when my mousse was done, I volunteered to take over the cooking of the crepes while they ate. Needless to say, some of the mousse made its way into the crepes with sliced fresh strawberries. We all enjoyed a bit of this decadent mousse, but there’s still some left in the fridge for St. Patrick’s Day proper. I noted the recipe makes 4 servings, but I think it definitely would feed more if you serve it with fruit or in crepes or on top of brownies. Or a lava cake? I’ll stop there, but I can think of a thousand ways to enjoy this Bailey’s Irish Cream Mousse!

Ingredients

  • 4 oz. mascarpone cheese
  • 1/2 cup whipping cream
  • 3 Tablespoons powdered sugar
  • 1 Tablespoon dark cocoa powder
  • 2 Tablespoons Baileys Irish Cream
  • 1 teaspoon vanilla


Instructions

  1. In a small mixing bowl with an electric beater, whip the mascarpone cheese and whipping cream together until they start to look like whipped cream and you can see the tracks of the beaters in the mousse.
  2. Add the powdered sugar, cocoa powder, Irish cream and vanilla and beat a bit longer, scraping the sides of the bowl to get it all incorporated and smooth.
  3. Pipe or spoon into dessert glasses or on top of chopped fruit or poached pears. If desired, top with chocolate shavings or a bit of whipped cream. Enjoy immediately or refrigerate for later.

Notes

You can also scoop out the center of a strawberry, fill with mousse, then dip the top in melted chocolate to seal in the mousse. Or use this mousse inside of a crepe with some sliced strawberries.
