
Savory chicken, tangy gorgonzola cheese, melty queso quesadilla cheese and juicy sweet pears enveloped in a golden brown crunchy tortilla crust, this simple quesadilla is anything but ordinary. Using leftover chicken, it takes just minutes to prepare and the flavors seriously blew me away. If you’ve never had pears with blue cheese, you are in for a treat.

The other great thing about this recipe is that you can (somewhat) customize it to meet your dietary needs. There are so many different tortilla options available today: grain free, regular white ones, low carb, high fiber, whole wheat. Today I used organic white tortillas that we buy uncooked from Costco. The tiny little act of cooking the tortilla at home makes SUCH a big difference in the taste. They crunch up beautifully too. I’ve also had my eye on the almond flour tortillas, but haven’t taken the plunge yet. I’d love to try a sample before I commit!
Even if you’re lactose free, you can use lactose free cheese. And vegetarians can either skip the chicken or use the vegetarian version of chicken.

Make sure your pear is fully ripe and juicy. The pears they sell at the store are most always still green and hard. They are not ready! Let them sit out on the counter for a few days, then test the pear by pressing gently near the stem. If the pear gives in a bit, then it’s ripe. At this point, if you’re not eating your pears straight away, put them in the fridge immediately. If left at room temp for too long after they’re ripe, they’ll go downhill quickly. You’ll still want to eat (or cook) them within a few days after they attain ripeness. Pears at this stage taste amazing, but bruise easily.
The best cheese to use for this (and just about ANY) quesadilla is Queso Quesadilla (a.k.a. Queso Chihuahua), which means simply “cheese for quesadillas”. It’s a Mexican cheese that melts beautifully and has a mild flavor and lovely stretch. For this particular recipe, you could substitute Swiss, Gruyere or Mozzarella. But do NOT skip the gorgonzola or another blue cheese. That’s where the magic happens.

Ingredients
- 1 tortilla of choice
- 1/2 – 3/4 cup shredded queso quesadilla
- About 1/3 cup chopped leftover chicken
- 1/2 of a ripe, juicy pear, cored and chopped into chunks
- A bit of gorgonzola or blue cheese, crumbled (a little goes a long way!)
- About 2 teaspoons avocado oil
Instructions
- Prep your ingredients. Start to heat a frying pan over medium heat and coat the bottom lightly with avocado oil.
- Set the tortilla in the pan, cover half of it with the shredded queso quesadilla, then chunks of chicken, then tuck in the pear chunks. Top with crumbled gorgonzola and a bit more queso quesadilla, then fold the empty half over top.
- Cover and let cook until the bottom is crispy and golden brown. Drizzle a bit of avocado oil on the top half, then flip it to brown the other side. Cover again for a few minutes, then remove from heat, cut and enjoy!
Notes
For extra flavor, use some chopped cooked onions, peppers and/or mushrooms mixed in with the chicken. My chicken was cooked in onions, peppers and mushrooms, so some of that yumminess got tucked in along.
