When You Crave Boursin: Garlic Herb Cottage Cheese Dip

When you toss in herbs and two forms of garlic to whipped cottage cheese, it turns into an incredible rich, creamy garlic herb dip that tastes strangely similar to Boursin, that addictive cheese spread that everyone seems to love. This Garlic Herb Cottage Cheese Dip turns cottage cheese haters into cottage cheese lovers.

With one caveat: as long as they can tolerate garlic. Because this dip has a double dose of garlic. My friend and I discovered that it pairs especially well with buffalo flavored thin pretzels.

If you’re expecting a crumbly cheese spread, this ain’t it. This one is more dippable, great for veggies, fries or fritters. (If you’re looking for a crumbly good cheese spread, you might want to try my Irish pub cheese.)

But if you’re good with something creamier and softer with that good garlicky herb Boursin flavor in a fun, more dippable form, you’ve come to the right place.

I made this dip because I had a tub of cottage cheese that needed using and a folk festival/camping outing with lots of people coming down to join us. It seemed like the perfect time to try something new with cottage cheese.

I’ve made many a dip with cottage cheese in the past. So I know how well a whipped cottage cheese blend can go. You just need the right blend of seasonings to make it magical. And seriously, what goes better than garlic and fresh herbs? Boursin surely had the right idea there.

Although I noticed that in Boursin’s list of ingredients, they use chives and The Fiery Vegetarian‘s recipe did not call for chives. I considered adding chives, but it was already delicious just like it was. So I didn’t go hunting for chives in my yard. It’s been extremely dry this summer so I think my chives went missing. Because I didn’t tend to them. One person can only tend so many plants!

Unfortunately, lots of our friends and family bailed on us for folk fest this year and it ended up just me and my best friend. But that gave us more one-on-one time, so it all turned out well. When she tasted this dip, she exclaimed, “what IS this?!” (in a good way … she wanted to know how I made this dip of goodness). So I told her about the cottage cheese and the herbs and the garlic. And she asked if I blended it because it’s so smooth. Yes, yes, I blended it well. So there are no cottage cheese lumps.

Despite the drought, I’ve been watering my little raised bed and my garden this year is doing well! I have lots of fresh herbs for making into pesto and dips and such. This dip recipe might need to go on repeat.

I adapted this recipe slightly from The Fiery Vegetarian. I used fresh herbs and Greek yogurt. She used dried herbs and sour cream.
