A beautiful breakfast that will delight everyone (even though it’s super simple to put together), this Crescent Roll Breakfast Wreath will become a favorite for the whole family!


It’s Easter weekend and we are finally enjoying some gorgeous weather after a long, hard, super cold, wet, snowy winter. It has been in the 70s all weekend (during the day, at least). Everyone was very much enjoying time outside, playing yard games and sipping on beverages of choice. Some of us got too hot and had to go inside because we just couldn’t take all that heat after the frigid temps of winter! LOL.

I went up to my parents’ place to see the family. My kids didn’t come along (daughter had to work …), but my sisters and their families were there. That’s okay, my kids had some much-needed time to hang out with their dad and the rest of us had a great time enjoying each others’ company. I was the late-comer to the party, arriving Saturday afternoon (after I went to morning yoga, dropped my girl off at work and made a quick trip to Costco). I thought the family might have dinner waiting for me when I got there, but no, they had decided dinner was going to be an evening meal, so I found something to snack on until the wild turkey and all the fixings were ready. As usual, I got to make the salad, but my sister had brought a gorgeous homemade blue cheese yogurt dressing that tasted fabulous.

Since everyone else made dinner, it seemed only fitting that I should make breakfast. I had brought along lots of my sourdough crescent roll dough, which travels nicely in a cooler, so I could make a good breakfast for everyone … so this morning I woke up after a lovely restful sleep, put in my contacts, washed my hands and got to work. It wasn’t long until I was pulling this beauty out of the oven. My sister predicted I would need two of these, but I had other plans for the rest of the dough I’d brought (stay tuned!).

I thought I might have some “helpers” to make this, but all the kids were otherwise occupied, even my niece who always loves to help me cook. That’s all right … I just plowed ahead, on a mission to create a lovely breakfast for the family. Several of us ate and enjoyed this breakfast wreath. My nephew (who doesn’t normally eat eggs) totally loved this and thanked me enthusiastically for the delicious breakfast. Even more than the adults’ compliments, that made my heart sing. 🙂 Personally, I thought it was funny that the kids also wanted Auntie Ann’s spicy queso and bean dip with their breakfast. Along with their dips, my sister fed them apple slices, breakfast sausage and blackberries.

The rest of us had fresh, sweet juicy pineapple on the side. Totally perfect, although a fruit with contrasting colors would be the ideal sidekick to this meal. (I probably would have added some blackberries if there were any left … but honestly, my tastebuds were perfectly happy with the pineapple.)

Feel free to customize this to your own liking: adding veggies, hot peppers or salsa as you wish.

Crescent Roll Breakfast Wreath

  • Prep Time: 20 minutes
  • Cook Time: 20 minutes
  • Total Time: 40 minutes
  • Yield: 4 - 8 servings 1x

Ingredients

Scale
  • 68 eggs
  • 1/3 of a batch of sourdough crescent dough (recipe here) – or 1 can of crescent roll dough
  • About 1 cup of shredded sharp cheddar cheese
  • 4 slices back or 1/4 lb. breakfast sausage, cooked (or 4 slices bacon, cooked and crumbled

Instructions

  1. Preheat the oven to 350 F. Line a large baking sheet with silicon baking mat or spray with cooking spray.
  2. Scramble the eggs, adding salt & pepper to taste, but leave them slightly undercooked. (They’ll finish cooking in the oven.)
  3. If using homemade crescent rolls, roll out the dough into a large circle and cut into 8 – 12 triangles. Otherwise, take the crescent rolls out of their package.Arrange the triangles of dough in a star-shaped form, with the points facing out and the large sides in, overlapping the triangles as needed. You can use a small bowl in the center to help you place the dough.
  4. Sprinkle the inside of the ring with cheese, then pile on the meat and eggs in a circular form. Take the pointy edges of the dough and pull them inwards towards the center, tucking them underneath or as close as they will get.
  5. Bake at 350 F. for 15 – 25 minutes or until the rolls are nicely browned on top. Cut into slices and enjoy!
