I have been doing fruity herbal syrups for years, with various fruits and herbs … I’ve used them in Italian cream sodas and sangria, but also in cocktails. My daughter loves the cream sodas, my mom likes to add a splash of my special syrups to her wine. Me, I love refreshing summer cocktails like this. A hint of blueberry, vanilla, and the delightful scent of lavender with bubbly prosecco and the little  “buzz” of elderflower liqueur. If you’ve tried St. Germain, you know what I mean. Contrary to popular belief, you don’t need to wait until your lavender blossoms with flowers. The leaves have a beautiful fragrance that will lend the same lovely lavender flavor as the flowers.

I have found that a bottle of prosecco is great if I have a group of friends visiting … or if I’m headed to a group outing, but that doesn’t happen that often at my house (I have a buggy back yard, thanks to a messy pond and low areas that collect water … and yeah, house cleaning and yard work is not my top priority.) … but I love my herbs and my potted flowers that brighten my life.

So I make this pretty cocktail for social outings with friends … and also for nights when I just want a little bit of sparkle before bed. For those nights, I keep a little individual sized bottle of bubbly on hand … cheers, my foodie friends!

Blueberry Lavender Cocktail

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: enough syrup for 6 - 8 cocktails

Ingredients

Scale

For the blueberry lavender syrup:

  • 1 cup fresh or frozen blueberries
  • 1 cup sugar
  • 1 cup water
  • 12 teaspoons real vanilla extract
  • A sprig of fresh lavender leaves and/or blossoms

For each cocktail:

  • 1/2 oz. of blueberry lavender syrup
  • 1/2 oz.of St. Germaine or other elderflower liqueur
  • 46 oz. Prosecco or champagne
  • For garnish: fresh or frozen blueberries, edible flowers and/or mint leaves

Instructions

  1. In a medium saucepan over medium heat, add the blueberry lavender syrup ingredients and stir. Bring to a boil, stirring until the sugar is dissolved.
  2. Reduce heat to a simmer and cook for about 10 – 15 minutes or until the blueberries release their juices and the syrup smells fragrant. Remove from heat. Using a fine-mesh strainer over a funnel. strain out the blueberries and lavender, collecting the syrup into a jar. Cover and put in the fridge to cool.
  3. Once the syrup has cooled and it’s cocktail time, for each cocktail: in a champagne glass, add the blueberries, syrup, and liqueur. Pour prosecco or champagne over. Stir gently with a spoon, then garnish with blueberries, flowers and/or mint leaves. Enjoy!
