Simple but So Good Grilled Zucchini

Grilling zucchini is an easy way to make a smoky good side dish to go with whatever else you’ve got cooking on the grill. It’s so simple, but SO good! Just three ingredients. And I love that zucchini is such a versatile veggie; it goes with just about everything.

If you’ve ever grown zucchini, you know how quickly it can grow … and as hard as you try, sometimes it gets too big before you even realize it. This is a great recipe for those zucchini that got a little bit too big. I don’t mean the gigantasaurus zucchini, the ones you could use as baseball bats (although, to be honest, maybe it would!) I used a zucchini that got a little too wide and started developing seeds. I’m not afraid of seeds, though. I quite like them. I was pleasantly surprised to discover that when zucchini seeds are grilled (IN the zucchini slices), they add a really nice kind of “roasted nut” flavor to the dish. Seriously! Give it a try … I think you’ll love it.


That said, even the smaller slices without seeds were quite tasty … so you really don’t HAVE to have one of these “seedy” zucchini for this recipe.

I have to admit: I wasn’t quite sure this would be good. I plated my zucchini and took photos “just in case” I liked the recipe … and was totally surprised that I not only LIKE it, I kind of couldn’t stop munching once I’d had a taste. I couldn’t eat it all, though, and ended up refrigerating the leftovers … and still, grabbing a round or two cold from the fridge, it still tasted superb, munchworthy, veggie-licious.

All in all, it left me wondering, though: How the heck does a recipe THIS simple taste so good?

So many times when I’m making a new recipe, I tweak it quite a bit, adding this or that to get the flavor “just right” … but in this case, nothing more was needed. It was perfect just like I made it.

This recipe is the model of simplicity. Just three ingredients: zucchini, olive oil and Red Robin Seasoning. I’m sure there are other seasoning blends that would be just as good … I just love my Red Robin Seasoning. If you don’t have any, here’s my recipe … or if you’d rather use your own favorite seasoning, give that a try.

Description

How can something so simple taste SO good? This easy grilled zucchini is especially wonderful with a slightly seedy zucchini to give the slices a nice nutty flavor! 


Ingredients

Scale
  • 1 medium-large zucchini
  • A couple Tablespoons extra virgin olive oil
  • Red Robin Seasoning (recipe here … or your favorite seasoned salt)

Instructions

  1. Choose a slightly larger zucchini that has a few seeds in it. Slice the zucchini horizontally into 1/3 inch slices. Brush both sides of the zucchini slices with olive oil and sprinkle with the seasoning.
  2. Heat up the grill. Set the zucchini slices directly on the hot part of the grill and let cook for about 5 minutes, until little dark blistered spots appear, but the squash isn’t burned. Flip the slices and cook for a few minutes on the other side until similarly browned.
  3. Remove to a plate and let cool slightly before serving. Makes a great appetizer or side!
