A dreamy combination of smoked salmon and shrimp mixed with cream cheese, sundried tomato pesto, red onion, herbs & pecans, then mounded onto toast with melty white cheddar, tomato and basil, this Shrimp & Salmon Melt will be your new favorite sandwich!


This sandwich post has been waiting a looong time to become a reality. It was back at the beginning of August when I made it and the weekend of folk fest, an awesome music festival in a beautiful setting that we really really love. We have gone every year for I don’t know how many years.

The only problem with folk fest is there aren’t many food or drink vendors there. Which really isn’t such a problem when you’re overloaded with food all the time like I am. Usually we camp at the festival, so I take some time to plan out meals and do some prep ahead of time. I usually take three days off work to plan and prepare the food and get all my camping gear together.

But this year we didn’t get a camping spot, so I didn’t take three days to prepare the food to bring along. We decided this year we should keep it simple and I didn’t make much of anything in advance. But, as usual, mom and dad brought loads of veggies from their garden, so we had lots of cucumbers and tomatoes and such to munch on. Dad also brought a loaf of his homemade French bread too. But we had nothing substantial to eat: no protein in sight … and we weren’t going to last all day on the little wood fired pizzas they sell there. My first thought was a sandwich of some kind, but what? I had no sandwich meat in the house.

Friday night wasn’t a problem. We ate before we left for the festival on Friday, so we were okay on Friday, but Saturday we were going to be there all day and well into the night. I ran off to yoga Saturday morning. On my way home from yoga, I was trying to figure out what we were going to EAT. I thought through what I had in the freezer … hmm, wasn’t there some leftover smoked salmon that I’d frozen? And some shrimp. I most always have shrimp on hand. I knew I had sun dried tomato pesto because I keep a container of that in the freezer too. This sounded like the start to a very good sandwich.

I got home from yoga and started grabbing things to make this shrimp and salmon salad sandwich mix. I got lost in my creative mode, though, and lost track of time … and suddenly remembered I had volunteered and my shift started at 1 pm and it was 12:40! Eeek. We were going to be late. I told my mom and dad we had to book it down there NOW. I threw the salmon salad in the cooler and off we went. I texted my friend who was volunteering with me and she assured me she would be there. I showed up about 20 minutes late for my “shift”, but it was fine. They didn’t care. There were people there to take care of it. During my shift, I got everything all organized and sold a whole lot of CDs and other various assorted things and I stayed a little late and trained the next shift of volunteers before I retired to “our spot” … and we ate delicious food and drank wine and totally reveled in the beautiful music and the gorgeous scenery.

At the festival, we had this mixture on dad’s French bread with cucumber and tomato and it was truly delicious like that, but after the festival, when we got home, I decided it would be even better as a hot sandwich and I made these yummy melts with the last of it. OMG SO good! The combination of crunchy and creamy textures and flavors will totally win over your tastebuds.

You guys are going to love this sandwich, hot or cold, it’s delicious.

Shrimp & Salmon Melt

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  • Yield: 3 - 6 servings 1x

Ingredients

For the shrimp & smoked salmon salad:

  • 23 Tablespoons finely chopped red onion
  • 1 large stalk of celery, chopped into small pieces
  • 1520 medium pre-cooked shrimp, chopped
  • 6 oz. smoked salmon
  • 2 oz. Greek cream cheese (or Neufchatel)
  • About 1 Tablespoon sun dried tomato pesto (recipe here – or use store bought)
  • About 1/4 cup bacon ranch dressing (recipe here – or use store bought)
  • 1 small stalk of tarragon leaves, chopped
  • 1/2 cup chopped toasted pecans

For the sandwiches:

  • Thinly sliced French bread
  • Sliced white cheddar cheese
  • Slices of fresh garden tomato
  • Fresh basil leaves

Instructions

  1. In a medium mixing bowl, stir together the ingredients for the shrimp & smoked salmon salad until well mixed. Add more bacon ranch or pesto until you are pleased with the taste and texture of the salad.
  2. Toast the French bread slices, then spread each one with a generous amount of the shrimp & smoked salmon salad. Top with slices of cheese and bake in a toaster oven (or oven) at 425 for 5 – 10 minutes or until the cheese is nicely melted. Top with sliced tomato and fresh basil and enjoy!
